Here it is!! My latest food infatuation - my Green Monster Smoothie!
Now, when I first found the recipe, I was pretty scared. SPINACH IN A SMOOTHIE?! But the maker of the recipe swore it to be super yummy, so I figured it would be worth trying.
I changed the ingredients and portion to fit my taste (and blender) and this is what I came up with...
You'll need:
- 2 ice cubes
- 3 strawberries
- 1 Chobani Greek yogurt, any flavor
- 1/4 cup 1% milk
- 1 heaping tablespoon peanut butter
- 3 hefty pinches of fresh baby spinach leaves
I use my roommate's Magic Bullet and it truly is one of God's gifts to the world. I highly recommend it - it's too convenient not to love.
I must warn you - the smoothie has been rumored to be a great diet food and I believe I understand why. It's practically Metamucil in a gloriously yummy smoothie.. but I'll take it. It tastes WAY too good to not drink up as fast and as much as possible.
So, trust me and try this recipe out! You won't regret it! It's not only a great post-run refuel tool, but also a great breakfast, meal replacement, and/or snack!
